Veggie-Egg Muffins

My heart always smiles as soon as I know that my kids eat healthful food.  Even though it always ends up with additional work for me but I love when my kids help me in the kitchen.  The thought, that they know what they’ve put inside, how they’ve made it and with what ingredients it always brings a hope that when they grow up hopefully they will continue healthy eating.

For this recipe you will need:

  • 4 eggs,
  • veggies (whatever you can find in the fridge) carrots, green beans, broccoli, mushroom, bell peppers – just cut them in small pieces,
  • meat (leftover chicken? ham) or no meat,
  • cheese
  • salt and pepper

Cut everything in smalls pieces, mix together and pour to muffin pan greased/sprayed with olive oil or coconut oil.

Bake for 12-15 min in 400 F

Moje serce najbardziej sie usmiecha jak wiem, ze dzieci zdrowo jedza!.. mimo, ze zawsze konczy sie to dodatkowa praca dla mnie, lubie jak dzieci mi pomagaja. Sama mysl, ze wiedza co jest w srodku, jak to sie robi, z czego sie sklada i moga to sami zrobic (oczywiscie narazie z moja pomoca) podnosi mnie na duchu, ze moze jak dorosna to beda kontynuowac zdrowe jedzenie!?
